More of a rough guide than a recipe. Add or remove whatever you like, except perhaps the potatoes.


  • small potatoes, quartered, or bigger cut into 2–3cm lumps
  • mushrooms, roughly chopped if you want
  • onion, sliced as coarse or fine as you prefer
  • garlic, crushed or sliced
  • thyme
  • rosemary
  • parsley
  • salt
  • pepper
  • crumbled or cubed feta
  • olive oil
  • ⅓–½ cup stock
  • ⅓–½ cup wine


Toss together everything except the stock and wine. Place in a baking dish. Carefully pour over the stock and wine.

Bake at 200–220C for 30–50 minutes depending on your oven, the potatoes, etc.
