A simple one-pot meal.

Ingredients

Quanties are just suggestions to start with; experiment and make it how you like it.

  • onion
  • garlic
  • a mix of vegetables like celery, capsicum, carrot, zucchini, etc., chopped small
  • Ras el hanout
  • 1 tin chickpeas
  • 1 cup rice
  • tomato paste
  • 1½–2 cups stock, whatever quantity the rice requires to cook by absorption
  • ½ cup white wine

Method

Fry the onion, garlic, celery and capsicum for a few minutes

Add the carrot, zucchini, Ras el hanout, chickpeas and continue to fry for a few minutes

Add the tomato paste and rice and fry for another minute or two

Add the wine and stock, bring to the boil, then cover and simmer on low for however long the rice requires to cook by absorption.

Rest for a few minutes.

Optionally stir through some cheese, tinned tuna or other preferred protein to serve.
